Introduction.

Most of the information presented in this Website is based on the rural situation, where seasonal availability of food is very evident in the largely subsistence farming communities. Some information is also given on foods available in the capital, Banjul, usually referred to as `The Coast'. Climatic variations along the length of the country will give differences in harvesting times, and where months are quoted they refer to the West Kiang area. The methods of food preparation refer mainly to those of the Mandinka people, though some reference is made to Wolof and Aku dishes. There are undoubtedly variations in the diet in different regions and in the spelling and words used to describe foods and dishes, especially as Mandinka is not primarily a written language, and alternatives are given where they are known.
